Creamy Garlic Pasta!

I totally ended up making this wrong and it still tasted fantastic so I'd call it a win :] This recipe was found at The Cheese Pusher.



Ingredients:
- 2 tsp olive oil
- 4 cloves garlic, minced
- 2 tbsp butter
- ¼  tsp salt
- ½ tsp pepper
- 3 cups chicken stock
- ½ lb spaghetti or angel hair pasta
- 1 cup grated parmesan cheese
- ¾ cup heavy cream
- 2 tbsp chopped fresh parsley

Directions:
1) Bring olive oil to medium-low heat and mix in garlic for 1-2 minutes
2)  Mix in butter until melted
3) Add salt, pepper, chicken stock and raise heat till it boils
4) Add pasta and cook to the box's directions
5) Reduce to medium heat and mix in parmesan cheese
6) Turn off heat and mix in cream and parsley
7) Enjoy! :]

Ready for Spring??

Happy Spring! Today I'm mixing Happy Monday in with TAT which I'm posting on a Wednesday...talking about Spring style! Saturday we had a fun day visiting the Easter Bunny. Little one had her Easter dress on so why not show it off? Even though you can't see it all that well here. Her dress is from Carters and I just love the pastel pink of it! There's a little flower on it too which is covered up but it makes me so excited for Spring! The weather is even starting to get a wee bit warmer!! I almost went on a walk yesterday but decided it was just a few degrees too cold yet. Here's hoping the warm weather sticks around though!

Disney Dreaming...

Even before I had munchie I’ve dreamed of taking my kids to Disney. Now that she is here those dreams have become full blown fantasies. I literally cannot wait. I would take her right now if I could. Travel obsessed mommy = dangerous. People think I am crazy to want to take someone so small but I really want to take her when she’s 18 months. In my opinion, this couldn’t be a more perfect time. So here are 10 reasons I can’t wait to take her and why it’d be such a great time to go. They might all run together, sorry!

#1: She wouldn’t need a ticket to the parks. Kids under 3 are free with an adult.

 
#2: She also wouldn’t need a ticket on the plane. Kids under 2 can ride on your lap. Sure it’s not the safest unfortunately but it is the cheapest.


#3: She wouldn’t be fully aware of some of the scarier rides. Some loud noises may be startling but she’d be able to go on most every ride (except for rollercoasters).


#4: How amazing will it be to watch her toddling along up to characters, getting pictures and autographs and giving hugs??



#5: Speaking of toddling…I love picturing her toddling her way up Main Street towards the castle. Picture perfect.


#6: Think of all the amazing memories you could create. Sure, she won’t remember them but take LOTS of photos and you will always remember seeing that smile and spending time as a family. The first haircut at Harmony's, the first time meeting Mickey, the smiles!


#7: Disney goes above and beyond for your little one. From pack’n’plays in the hotel room to my first visit buttons and the baby centers; they really know how to make a first visit special.


#8: PRINCESS DRESSES. That is all!


#9: A chance for a relaxing vacation at Disney. Every time I’ve been it is usually go go go. This time we would have a little one that would need naps and attention. It is a perfect chance to relax a little either at the parks, the pool, or back in the hotel room.


#10: A chance to stimulate that little brain with more than just peek-a-boo! What better experience to help that little one learn and grow??


So I know it’s kind of a crazy list but if you’re planning on taking your little one you need to have a totally different mindset. Go with the flow and let them lead the parade. I can’t wait for the day I get to see her face light up with excitement as she looks up at the castle or mickey or her favorite princess for the first time. Untill then I can just keep daydreaming. Pasta, Beans, & Sausage!

So I haven’t personally made this yet but my mom has and I love it…which is weird because I hate sausage. Haha. So anyway, on to the recipe! This was found through epicurious!

Pasta e Fagioli Con Salsicce



Ingredients:
  • 1 cup (8 ounces) dried cannellini (white kidney) beans, picked over and rinsed, or 1 1/2 cups canned beans (what we used)
  • 1 tablespoon plus 1 teaspoon kosher salt, plus additional for boiling pasta 
  • 4 tablespoons olive oil 
  • 8 ounces sweet Italian sausages, casings removed 
  • 1 small onion, finely chopped (about 1 1/3 cups) 
  • 10 cloves garlic, minced (about 1/4 cup) 
  • 1 sprig fresh rosemary 
  • 4 cups chicken stock or low-sodium chicken broth 
  • 3/4 teaspoon freshly ground black pepper 
  • 8 ounces tubetti, ditalini, or other small tubular pasta
Directions:

Step 1) Combine beans and water to cover by two inches, cover and refrigerate at least 8 hours (no need to do this if using the canned)
Step 2) Drain Beans.
Step 3) Over moderate-high heat combine beans, cold water to cover by 1 inch, 1 tablespoon salt, and 2 tablespoons olive oil. Boil, Reduce heat to low and simmer partially covered until tender, approximately 90 minutes. Drain and set aside. (again, no need if using canned)
Step 4) Over moderate-high heat, boil 6 cups salted water.
Step 5) Meanwhile, over moderate heat, heat remaning 2 tbsps olive oil until hot but not smoking. Add sausage, breaking it up, until browned about 6 minutes.
Step 6) Add onions and saute until transkucent, about 5 minutes.
Step 7) Add garlic, rosemary, beans, stock, pepper, and remaining 1 tsp salt and simmer.
Step 8) Reduce heat to moderate-low and simmer uncovered until heated, about 4 minutes.
Step 9) Cook pasta in boiling water until tender (about 8 minutes), drain, and stir into soup.
Step 10) Enjoy!!

TAT today is baby bloopers! I feel like I could post a kajillion of these! Little one loves to look all cute and as soon as I click the button she's off making some wacky face.


 This was cute to me...until I realized dogbert's licker there was about to go straight in her mouth. ...lovely.

We were trying to take a picture of her little mohawk but she just happened to yawn at the most perfect time.
"Yeahhh, rock on!!"


Literally all I can think when I see this picture: "Dang girl, hold up! I need them shoes!"

Happy St. Patrick's Day!!

Happy Monday! We had such a great Saint Patrick’s weekend around here; I hope you did too! Friday we went to a great party at my brothers’ house. His girlfriend made all sorts of yummy green treats and munchkin looked very festive in her green!


Saturday I was in the parade as a clown! It was freezinggg and snowing. Yuck! But it did make me realize how much I love being Irish. Think little one will want to take Irish dance?? I hope so!


Saturday night we spent more time with my brothers watching movies and relaxing. It was just what I needed!

Sunday morning we went to deliver door hangers for Scouting for Food. If you have it in your area, please try to donate and support! Around here it usually stays local so it’s great to help out others in our area!


Sunday night…I worked :[ But my husband got to spend time with his family and munch got to meet some great family!

So that sums up our weekend…What did you do to celebrate?

One Month Already??

Okay so I've had this typed up for a while and it's a little late but better late than never!


 Little Munch, I honestly can’t believe how fast a month went. I am just now starting to get life figured out as a mom. We've started to get a pretty good routine down and I have been blessed with such a good baby.


We had a little trouble trying to put on some weight in the beginning but it seems your little butt is growing more and more each day. Sometimes I look at you and wonder where my tiny baby went. (I know, I know, that is only going to get much much worse!) It’s so funny to see how you kind of almost fit into actual clothes now. For the life of me I couldn't find a pair of pants that would fit and I was too hesitant to buy anything that’d only fit for like a week but now I can put you in an actual outfit!


 You’re a power sleeper little one. Please promise Mommy that you’ll stay that way. I love only getting up at 3 & 7. Oh and a super snuggler too. You’re actually passed out on my chest as I type this. Adorable.


You love windows. I can’t wait till Spring/Summer when we can actually get you out there to play! We bounced and looked out the window for a while this morning and you were mesmerized.


You love music as well. It doesn't matter what kind. You love when I hold you up and dance and sometimes it even soothes you off to sleep.


Daddy and I are so very blessed to have you in our lives. Sure some times have been hard but you have brought so much joy to us and we couldn't imagine it any other way. Sometimes I wonder how we ever existed without our little girl. I look at your little face and I get so overwhelmed with emotions.


You look so serine when you’re sleeping and it’s amazing to me that right now you know no pain (except for a hunger pain! Or when you’re dirty!) But you don’t know what the world holds yet. It’s amazing to watch you explore and take in the world around you getting to know it and create your little personality.


We can’t wait to see what the future holds for you and our growing little family! Daddy and I love you so very much!
