Ingredients for Cupcakes:
1/3 cup oil
¾ cup buttermilk
1 teaspoon vanilla extract
¾ cup sour cream
Vanilla Cake Mix (I just used Yellow Cake Mix)
1 ½ teaspoon cinnamon
Ingredients for Icing:
8 oz cream cheese, softened
½ cup butter, softened
1 teaspoon vanilla
3 cups powdered sugar
Step 1) Preheat oven to 350 degrees.
Step 2) Combine eggs, oil, buttermilk, & vanilla. Mix in sour cream.
Step 3) Add cake mix & cinnamon. (I also added some crushed cereal pieces but make sure you crush to a fine powder)
Step 4) Bake for 15-18 minutes.Step 5) Beat cream cheese and butter until fluffy. Add vanilla and powdered sugar. Adjust the consistency using milk if it is too thick.
Step 6) Pipe icing onto cooled cupcakes topping with cinnamon sugar & a cinnamon toast crunch square!
